Incredible Vegan Chocolate Cake
3 cups flour
2 cups sugar
1 teaspoon salt
2 teaspoons baking soda
6 TB Cocoa powder
2/3 cup vegetable oil
2 TB white vinegar
2 tsp. vanilla
2 cups water
Preheat oven to 350, grease and flour a 9 x 13 pan.
In a mixing bowl sift together flour, sugar, baking soda, salt and cocoa powder. In a second bowl combine oil, vinegar, vanilla and water. Gradually add dry ingredients to wet ingredients and mix well. Pour into pan and bake until cake is firm in center and begins to pull away from edge, about 35-40 minutes.
Icing:
4 TB oil
4 TB water
6 TB sifted cocoa powder
2 cups sifted powdered sugar
Using a double boiler or heat proof bowl over simmering water, heat water and oil to boiling (or as close as it will get to boiling). You may also use a medium sauce pan. Remove from heat and stir in cocoa and sugar until smooth. Pour over cooled cake to edges and let cool.
Notes:
Your oven may be hotter/cooler, adjust baking time accordingly. I often only add 1.5 cups of sugar, and it is sweet enough for us.
